I do a variety of deer often unequal, and therefore my answer: It depends on is.

If you have a dehydrator brilliant (I have to), which could take 18 hours to complete in order to make the strips by hand and 8 hours to jerkey extruded floor.
If you have a dehydrator with a fan (which my current tool will have) that I made by hand, cut into strips about 7 hours and extruded jerky in about 3 hours.

The times are in my experience with a 4-Tray Food Dehydrator.
